A few points to think about in regard to your inquiry. First, if you only flew inside The Superdome.... where the airmass you are flying through is totally static (not rising or sinking)... then you would be able to (truly) see how your L/D and sink rate correlate to your airspeed.
However, we virtually never fly in a static air mass. So, one thing you want to start thinking about is 1) What is the air mass that I'm flying through doing? Your Netto Vario will tell you this. And 2) What's the most efficient way for me to fly through this air mass?
If you can enter your glider's polar into your FlyTec, then your instrument will be able to tell you, based on what the air is doing at any given moment, what will be the best airspeed for you to fly at... also at any given moment.

If you have the program called SeeYou, you can load your IGC files into that, play your flight and at the bottom of the screen you can watch your airspeed, sink rate and L/D at any given moment by playing your flight in real time (not sped up) and by pausing your flight and looking at the information.
